Disclosure: I don't plan any of these salads; they just sort of happen (usually at lunchtime). When hungry, I get a big bowl and then look around to see what I can put in it.

My dad's borsh recipe at 7000 feet. Water, beets, beet juice, potatoes, carrots, onions, celery, paprika, tomatoes, white cabbage, lemon juice, sugar, salt, butter, dijon mustard. Sour cream, cilantro, scallions, black pepper, garlic. The greens should have actually been cut up much smaller than this...

Five-minute oatmeal, nonfat organic milk, water, pumpkin, salt. (Microwave pumpkin upside down on a plate, until a fork goes through the outside, which might be about 15-20 minutes; then scoop out a table spoonful or two of the pumpkin and mix it into the oatmeal when the milk/water starts boiling.) Pumpkin oatmeal! I had to try it! Seasonal. (It was pretty good, although I might stick with bananas for breakfast oatmeal.)
